Amazing Cheesecake

Amazing Cheesecake Crust:

1 cup graham cracker crumbs
3 tablespoons granulated sugar
3 tablespoons melted butter

Preheat oven to 325 degrees. Combine the crumbs, sugar and butter and press into the bottom of a 9 inch spring form pan. Bake at 325 degrees for 10 minutes and set aside to cool.

2 (8 ounce) packages of cream cheese, softened
1/2 cup granulated sugar
2 eggs at room temperature, separated
1 tablespoon lemon juice
1 teaspoon grated lemon peel
1 teaspoon vanilla

Decrease oven temperature to 300 degrees. With electric mixer on medium speed, mix the cream cheese, sugar, juice, peel and vanilla until well blended. Add the egg yolks one at a time and blend well after each addition. Beat the egg whites until stiff and fold into the cream cheese batter. Pour over the crust and bake at 300 degrees for 45 minutes.

1 cup sour cream
2 tablespoons sugar
1 teaspoon vanilla

Stir together the sour cream, sugar and vanilla and spread over the baked cheesecake. Return to the oven and bake for 10 more minutes then remove from the oven and loosen the cake from the pan by sliding a sharp knife around th edges. Don't remove the rim.
Cool to room temperature and then refrigerate for several hours. Remove the rim before serving and then garnish as desired.
Serves 12.
