New York Cheesecake – La ricetta originale americana.

http://golosometro.it/wp-content/uploads/2012/08/MODIMG_5873.jpg

New York Cheesecake

Ingredients:

 http://golosometro.it/wp-content/uploads/2012/08/MODIMG_5883-770x460.jpg

Instructions:

Preparazione

Per una tortiera di 22-24 cm

PER IL FONDO.

New York Cheesecake

New York Cheesecake

New York Cheesecake

New York Cheesecake

New York Cheesecake

New York Cheesecake

New York Cheesecake

New York Cheesecake

Plain Cheesecake

Plain Cheesecake Crust:
2 cups graham cracker crumbs
2 tablespoons granulated sugar
1 stick butter, melted

Preheat oven to 350 degrees. Prepare a 9 inch spring form pan by wrapping the bottom with two layers of heavy-duty aluminum foil. Spray the pan with non-stick spray. Mix the graham cracker crumbs, two tablespoons of sugar, and the cooled butter and press firmly into the bottom and halfway up the sides of the springform pan. Place the prepared spring form pan into an oven-proof pan that it can fit into and is deep enough to use as a water bath. Set aside.

Plain Cheesecake Filling:
3 (8-ounce) packages of cream cheese, softened
3 eggs at room temperature
1 cup granulated sugar
1 cup heavy cream, room temperature
1 teaspoon pure vanilla extract
1 tablespoon fresh lemon juice

With an electric mixer on medium, beat the cream cheese for several minutes and then add the cup of sugar and continue beating until the mixture until fluffy and creamy. Make sure all of the cream cheese is well beaten. Add the eggs one at a time, beating well after each addition.
Stir the lemon juice and vanilla into the heavy cream until well blended. (may be a little lumpy).
Add the cream mixture to the cream cheese mixture and mix well at medium speed. Scrape down the sides and beaters periodically so that the mixture is smooth. Pour the mixture into the prepared springform pan.
Place the spring form pan inside the other pan and fill the outer pan with enough hot water to put it halfway up the sides of the spring form pan. (make sure the foil is securely around the pan so it doesn't allow water to get into the cheesecake). Place the two (2) pans into the oven on the middle rack.

Bake about 45 minutes or until it is golden brown and the edges are firm to about 1 inch in on the pan.
Turn off the oven and open the door slightly but leave the cheesecake in the two pans inside the oven until they are cool enough to touch. After cooling to this point, it should be firmer and no longer jiggle when moved.
Remove from oven and cool completely on a wire rack after running a sharp knife around the edges of the pan to loosen the cake (but do not remove the rim yet). After cool, chill in the refrigerator at least four hours. Remove rim of the pan before serving.

Plain Cheesecake Recipes In name only...definitely not in taste!

plain cheesecake

You will find that the name plain cheesecake recipes is evidently a misnomer. The reason I am using that to refer to them is simply because they are cheesecakes in their purest form. This means there are no bells and whistles to mask the pure, decadent flavors we associate with a good cheesecake. I am not saying one is better than the other because everyone has their own preference when it comes to this popular dessert.
All of the plain cheesecake recipes listed in this section are just of my opinion. I know most cheesecakes could probably fit into at least two if not more categories at any one time. I took upon myself the task of deciding where each recipe fit. Like I indicated earlier, you might have chosen a completely different heading for each recipe.
I tried to include recipes here that don't have any toppings which are sometimes associated with cheesecake such as fruit, nuts, caramel, etc. A good example of one of the plain cheesecake recipes I put here is a New York Style Cheesecake. This is a definite favorite of many people...as evidenced by its place of honor on many restaurant menus.
It was really difficult to include a lot of different cheesecakes in this section because of the unique range of features various cheesecakes have. I hope I wasn't too off base with my selections and that you will enjoy some of the following plain cheesecake recipes.

Baked Vanilla Cheesecake (serves 6)

from my pc 214

A good baked vanilla cheesecake is an uncommon thing of beauty. A balance between subtle flavour and light texture. I often thing back to several New York deli's that made the very best cheesecakes, ones that even got New Yorker's talking.

Once I decided to bake a cheese I wanted to create a different kind of fruit sauce to go with it. I do think busy chefs tend to go for the tried and tested rather than giving something else a try. Although a good Vanilla Cheesecake is quite light it is still rather rich so you need something to cut through that richness.

I came with a sauce made from Papaya (Paw paw) and Passion fruit.

Both these fruits are rarely used on their own let alone in combination and yet the resulting sauce worked supurbly with the cheesecake.

Chef's Tips

One of the biggest reasons the top of a baked cheese splits open is it is baked to fast, or cooled too fast (hen

Dip your knife into hot water and wipe with a towel between slices to help give you clean looking slices. Instead of throwing away expensive empty vanilla pods keep them in a sealed jar covered with Caster sugar to infuse the sugar with real vanilla flavour.

Perfect Cheesecakes

Learn a few simple techniques to avoid lumps, cracks, and sunken middles.

Baking in a Water Bath

Cheesecake is a custard at heart. It's delicate, so you want to bake it slowly and evenly without browning the top.

The most effective way to do this is to bake it in a water bath. Since water evaporates at the boiling point, the water bath will never get hotter than 212 degrees F (100 degrees C), no matter what the oven temperature. This means that the outer edge of your cheesecake won't bake faster than the center, which can cause it to soufflé, sink, and crack.

Baking Cheesecake

It's common to overbake cheesecakes because, while they might look underdone, they are actually done when the center is still wobbly. At this stage, residual heat will "carry over" and the center will continue to cook.
Remove cheesecake from the oven to cool on a rack, or simply leave the door of the oven closed, turn off the heat and let the cheesecake cool for at least an hour. This helps prevent the cheesecake from sinking in the center.
After chilling, the once-wiggly center should firm up just fine.

Mixing Matters

  • The cream cheese should be at room temperature before you begin mixing, or you'll end up with lumps in your cheesecake.
  • Using cold cream cheese also leads to overbeating--whipping too much air into the batter--which forms unattractive air bubbles on the surface of the cake.
  • Unless the recipe instructions specifically note otherwise, you should beat the cream cheese by itself until it's smooth and light, before adding any other ingredients.
  • If you end up with lumps in your batter, run the mixture through a sieve or give it a quick spin in the food processor and you'll have silky smooth results.

Putting the Cheese in Cheesecake

Whether you're making an Italian-style cheesecake with ricotta cheese or a classic New York cheesecake with cream cheese, don't skimp on the fat content. Reduced fat and nonfat cream cheeses contain fillers that might prevent the cheesecake from setting properly. Never substitute whipped cream cheese for the solid block.

All About Texture

Eating cheesecake is a very sensual experience: texture is everything. Some recipes contain a small amount of starch, such as flour or cornstarch. These cheesecakes have a more cake-like texture. Cheesecake recipes that do not contain flour are intended to be luxuriously smooth and dense.

Loosen the edge of the cheesecake from the pan with a thin, sharp knife. Release the spring from the pan, remove the ring, and allow the cheesecake to cool for 15 more minutes. Wrap the cheesecake in plastic wrap and refrigerate until cold, at least 2 hours.
  8. To make frosting, melt 8 ounces of chocolate chips in a saucepan over low heat, stirring until smooth, and mix in the sour cream until smooth and well combined. Frost the cheesecake with the frosting and refrigerate 10 minutes to set the frosting before serving. Refrigerate leftovers.

How to Bake Cheesecake, Step by Step

The key to perfect cheesecake is in the baking. This water bath method bakes the cake very gently, so it won't darken, curdle, or crack.

A springform pan works best because you can remove the cake easily, but muffin tins or any other cake pan will work fine. If you use a plain cake pan, grease it well and line the bottom with parchment paper

1. Preheat your oven to the temperature recommended in your cheesecake recipe. To prevent water from seeping into the removable bottom of the springform pan, wrap aluminum foil completely around the bottom and halfway up the sides of the pan. Place the cheesecake into a jellyroll pan (or any baking pan with sides) and place the pans into the oven. Use a teakettle to fill the outer pan with hot water. Cheesecakes usually bake for about 1½ hours, so check the bath after the first hour and refill if necessary.

2. Because cheesecake is very soft, it can be difficult to judge when it's done baking. One way to check for doneness is to take the cake's internal temperature with an instant-read thermometer. The ideal temperature for a cheesecake is around 160 to 165 degrees F (70 to 72 degrees C). You can also insert a small knife into the center of the cake, and if it comes out clean, the cake is done. Some bakers turn off the oven and leave the cheesecake in it for an additional hour to ensure it's completely set.

3. Once the cheesecake has been removed from the oven, it needs to chill thoroughly--preferably overnight. The cake will have pulled away from the edges of the pan. Carefully run a small knife around the edge of the pan to loosen any bits that might stick to the pan.

4. Unclip the clasp at the side of the pan, watching for any areas that stick. Carefully lift the outer ring over the top of the cake. If you used a plain cake pan and don't want to serve dessert in the pan, invert a plate covered with a sheet of waxed paper over the pan. Tip the cake pan over the plate, and remove the pan. Invert a serving plate over the bottom of the cheesecake, and flip it over. Remove the top plate and paper, trying not to peel off the "skin" on the surface of the cheesecake. Any imperfections can be covered by chocolate ganache, a fruit sauce, or a layer of lightly sweetened sour cream.

5. For a seamless look, you can smooth the sides of the cheesecake with a hot, wet knife. Any toppings or garnishes can be added at this point.
