Junior’s Cheesecake Secret Recipe & Junior’s Dessert Cookbook Review

The Chew: Junior’s Cheesecake Review

“Some of the best cheesecake in the world can be found in Brooklyn at a place called Junior’s,” Clinton Kelly explained, which is why Jason Roberts went there to explore what makes their Junior’s Cheesecake recipes stand out above all others.
Jason Roberts said that New Yorkers are a tough breed, but almost all of them will melt when it comes to the city’s most popular dessert: cheesecake. There are so many flavors and varieties to choose from, but if you want the best of the best, you have to go to Junior’s.

The Chew: Junior’s New York Cheesecake History

Alan Rosen is the third generation owner of Junior’s Cheesecake, which he says opened on election day in 1950. His family opened up a restaurant and knew they had to include cheesecakes on the dessert menu. His grandfather sampled the city’s offerings in an attempt to create a better version of the iconic New York dessert.
By 1973, Junior’s was hailed as the best cheesecake in New York by the Village Voice and New York magazine, and it’s a top spot they’ve clung to ever since. “The recipe has not changed one bit in 62 years,” Alan Rosen said.

In the bakery behind the scenes at Junior’s Cheesecake, Alan gave some insight into how his family recipe hits the sweet spot in the world of cheesecake. “It’s not overly light. It’s dense. It’s sweet without being too sweet,” Alan said.
Jason got to help make a batch of cheesecake, using an enormous slab of cream cheese. One batch of ingredients makes 88 large cheesecakes, and other ingredients include sugar, eggs, and heavy cream. Of course, the family is not giving up its top secret recipe, but the cakes go through a water bath as one of their finishing touches.

A random survey of diners found that everyone has their own favorite variety, which could be why Jason didn’t know where to start his sampling process. From cherry and strawberry to fresh apple, raspberry, and classic plain, you might never run out of flavors to sample.
“No matter what flavor you like, if you’re looking for a good, fat slab of New York cheesecake, you have to come down to Junior’s restaurant for the best cheesecake in town,” Jason concluded.
Are you ready to book your trip to New York? It’s worth the trip just for the cheesecake, from the sound of things. Junior’s also gave the entire audience cheesecake samples and a copy of Junior’s Dessert Cookbook, which does include their family recipe for you to try at home.
