Plain Cheesecake Recipes In name only...definitely not in taste!

You will find that the name plain cheesecake recipes is evidently a misnomer. The reason I am using that to refer to them is simply because they are cheesecakes in their purest form. This means there are no bells and whistles to mask the pure, decadent flavors we associate with a good cheesecake. I am not saying one is better than the other because everyone has their own preference when it comes to this popular dessert.
All of the plain cheesecake recipes listed in this section are just of my opinion. I know most cheesecakes could probably fit into at least two if not more categories at any one time. I took upon myself the task of deciding where each recipe fit. Like I indicated earlier, you might have chosen a completely different heading for each recipe.
I tried to include recipes here that don't have any toppings which are sometimes associated with cheesecake such as fruit, nuts, caramel, etc. A good example of one of the plain cheesecake recipes I put here is a New York Style Cheesecake. This is a definite favorite of many people...as evidenced by its place of honor on many restaurant menus.
It was really difficult to include a lot of different cheesecakes in this section because of the unique range of features various cheesecakes have. I hope I wasn't too off base with my selections and that you will enjoy some of the following plain cheesecake recipes.





This coffee flavored cheesecake is sure to please all your friends!

Espresso Cheesecake

Crust:
1 1/2 cups crushed graham crackers with 2 t. almond extract added (or 1 1/2 crushed almond cookies)
6 T. butter, softened
Combine the crushed cookies and butter then press into the bottom and up the sides not quite to the top) of a 9 inch spring form pan and set aside.
Filling:
8 ounce package of semi-sweet chocolate squares
4 (8 ounce) packages of softened cream cheese
2 teaspoons instant espresso coffee powder
3 eggs
2/3 cup granulated sugar
1/3 cup milk

Preheat oven to 350 degrees. In a small heavy saucepan over low heat, melt 6 squares of the chocolate, stirring frequently. In a large bowl, with an electric mixer, beat cream cheese on low until smooth. Add melted chocolate, eggs, sugar, milk and coffee powder and beat until well blended. Increase the speed to medium and beat for 3 minutes, occasionally scraping the sides with a spatula.
Pour the cream cheese mixture over the crust and bake 45 minutes. Loosen cake from pan with a sharp knife and allow to cook on a rack. Cover and refrigerate the cheesecake (with the rim still on) for at least 4 hours.
Remove the rim from the pan and serve. Grate the remaining 2 squares of chocolate and garnish the top of the cake before serving.
