White Chocolate Cheesecake

White Chocolate Cheesecake Crust:
1 and 1/2 cups crushed chocolate sandwich cookies
3 tablespoons melted butter
Preheat oven to 350 degrees. Combine crumbs and butter and press into the bottom of a 9 inch spring form pan and bake at 350 degrees for 10 minutes. Set aside to cool.
3 (8 ounce) packages cream cheese, softened
3 eggs at room temperature
1/2 cup granulated sugar
1/2 teaspoon vanilla
1/2 pound white chocolate, melted

With electric mixer at medium speed, mix cream cheese, sugar and vanilla until well blended. Add the eggs, one at a time, blending well after each addition. Add the melted white chocolate and blend well. Pour over the crust and bake at 350 degrees for 40 minutes.
Loosen cake from pan with a sharp knife but don't remove the rim. Cool to room temperature and then refrigerate for several hours before removing the rim of the pan and serving. Garnish as desired.
Serves 12.
