New York Cheesecake

MAKES: 16-20 SERVINGS | EST. TIME: 3HR
 
 
This is the only New York Cheesecake recipe I had to try before my family fell in love with it. You see I don't like  cheesecake (crazy, i know), but my sister does so I trust her when she says this recipe is amazing.
(TIP: Glaze the topping with apricot jam to give it a shine)

Ingredients

Crust:
  •  1 ½ cups chocolate wafer crumbs
  •   ¼ cup melted butter
New York Cheesecake:                                                                                    
  • 3 pkg (each 8oz) softened cream cheese
  • ¾ cup granulated sugar
  • 4 eggs
  • 1 tbsp lemon juice
  • 1 tbsp vanilla
  • pinch salt
  • 1 cup sour cream
Glazed Strawberry Topping:
  •  6 strawberries
  • 1 tsp unflavoured gelatin
  • ⅓ cup seedless raspberry jam

What to do

  1. Grease bottom of 9-inch springform pan; line side with parchment paper. Centre pan on large square of heavy-duty foil; bring foil up and press to side of pan. Set aside.In a bowl, stir crumbs with butter until moistened; press onto bottom of prepared pan. Bake in centre of 350°F oven until firm to the touch, about 10 minutes. Let cool in pan on rack.
  2. NEW YORK CHEESECAKE: Meanwhile, in a large bowl,  beat cream cheese until smooth; beat in sugar until smooth. Beat in eggs, one at a time. Beat in lemon juice, vanilla and salt; beat in sour cream just until blended. Pour over crust.
  3. Set pan in larger shallow pan; pour in enough hot water to come 1 inch up side of springform pan. Bake in centre of 325°F oven until shine disappears and edge is set but centre is still jiggly, about 1 ¼ hours. Turn off oven; let stand in oven for 1 hour.
  4. Transfer springform pan to rack and remove foil; let cool. Cover and refrigerate until firm, about 4 hours.
  5. GLAZED STRAWBERRY TOPPING: Cut tops off strawberries; place, cut side down, in concentric circles on top of cheesecake. In a small bowl, sprinkle gelatin over 1 tbsp water; let stand for 5 minutes to soften. In saucepan, stir together softened gelatin and jam; heat over low heat, stirring until melted and smooth, 2 minutes. Brush over strawberries. Refrigerate until set, about 30 minutes.
