Il
rito del tè deve avere il giusto spazio per compiersi: il tempo
riprende il suo ritmo naturale, niente orologi o orari prestabiliti; il
tavolo deve essere apparecchiato con cura, tovaglia perfettamente
stirata e tavola apparecchiata con le migliori porcellane. Ogni
particolare è simbolo di bellezza e cura. Attenzione per l'ospite.
Il tepore della casa, il camino acceso, tutto deve predisporre alla confidenza e alle chiacchiere .
L'ingresso
ufficiale del tè in Inghilterra risale al 1662, quando Caterina di
Braganza, lascio il Portogallo, per andare in sposa a Carlo II. Portò
con se le preziose foglie di tè che arrivavano dall'oriente. Dalla corte
londinese ben presto il rito sedusse i nobili e si diffuse nei salotti
aristocratici. Tuttavia come per tutte le novità, alcuni non vedono di
buon occhio l'introduzione della nuova bevanda: i birrai temono di
perdere clienti. Infatti per risolvere i problemi di potabilità
dell'acqua era stato chiesto ai birrai di produrre una birra molto
leggera (veniva addirittura consumata a colazione). Temendo la
concorrenza fanno pressione sul governo, che finisce per imporre un'alta
tassa sull'importazione.

Nonostante
queste pressioni politiche il tè diventa sempre più popolare, e già nel
1784 è alla portata di tutti (gradualmente le tasse vennero diminuite, e
proprio in questo anno il governo si impegnava a ridurle con la "
Commutation Act") . Il tè attraversa le classi, diventando molto
democratico.
L'abitudine
tutta britannica di macchiare il tè con il latte, è stata dettata dalla
prudenza: le prime teiere e tazze in porcellana finissima arrivavano
dall'oriente. Per paura di incrinare i nuovi preziosi servizi, gli
inglesi presero ad utilizzare il latte freddo per mitigare l'acqua
bollente.
Per un tocco di femminilità miscela Lady Grey: tè nero, bergamotto, scorza di arancia amara e di limone, petali di fiordaliso (centaurea cyanus).
